Tofu Chocolate Peanut Butter Pie (super easy!)

Want something delicious, chocolate and FULL of protein for dessert????

Check this easy recipe out!

Ingredients:
1 package chocolate chips (I prefer milk chocolate Girandehli, but that would make it not vegan, so feel free to substitute a big bag of carob chips!
1 box of Silken Tofu - the super soft stuff
1/2 cup of peanut butter

-Melt the chocolate in the microwave, mix it up so it is creamy!
-Blend it with the tofu and 1/2 cup of peanut butter in the blender
-Pour into pre-made pie crust
-Refrigerate 1 hour and enjoy!

Veggie Quiche

Credit goes out to my mom on this one. This is a really easy recipe and you can double it easily and have several meals.

YOU NEED:
pre-made pie shell (if you make your own this can be a gluten-free recipe as well)
2 cups veggies (I usually use a frozen mix or I use frozen spinach)
1 small onion (use those pre-chopped onions, they are the best!)
3 eggs
1 cup milk (you can totally use soy milk, I do!)
1 cup cheese of your choice (again soy cheese works), I prefer something with a bite!
1 tsp black pepper
1/4 tsp white pepper
1/2 tsp nutmeg

Bake crust at 400 for 3 minutes, remove and prick with fork, bake 5 minutes longer. Saute veggies and onions until tender (don't need to do this with frozen spinach), Combine veggies with eggs, milk, cheese, spices and salts/peppers. Pour into crust. Bake at 375 for 30 minutes until you can shake it and it is solid in the middle.

Veggie Masala

This one is to fight the sore throat! I found it in Vegetarian Times, but I changed the recipe a bit.

INGREDIENTS:
2 pieces of fresh ginger sliced
4 cloves of garlic, peeling
1 15-oz can of diced tomatoes
1/2 tsp of cayenne pepper
2 TBS oil
1 large onion
1 yellow pepper
2 potatoes
3 tsp garam masala (can be found at most larger grocery stores, email me if you want the recipe, it is a spice mix)
2 carrots (or get Trader Joe's pre-sliced carrots)
2 tsp chili powder
2 cups cauliflower florets (again I suggest T. J.'s pre-cut cauliflower in a bag)
1/2 cup light coconut milk

1. Add ginger and garlic to food processor, process, add tomatoes with the juice & cayenne pepper
2. Saute onion and bell pepper in oil. Stir in potatoes, carrots, garam masala & chili powder, reduce heat hook 10 minutes
3. Add cauliflower, tomatoe mixture and 1/2 cup of water. Simmer 20 minutes
4.Remove from hear, still in cocunut milk. Season with pepper

I serve this with rice. It is much better the second day for lunch after the spices have sunk in!

Vegan Oatmeal Chocolate Chip Cookies

I am going to start posting recipes for my friends to get the started on cooking vegetarian and/or vegan at my woman's groups request.

I am going to start with:



Oatmeal Chocolate (or carob if you are hard core vegan) Chip Cookies

Ingredients:
1 cup margarine/butter or dairy-free margarine (Earth Balance is good)
1 cup sugar
1 cup brown sugar
4 Tablespoons water
2 Tablespoons flaxseed meal
2 cups white flour
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups oats
1 package chocolate chips/carob chips

Directions:
Oven 375
Mix together water and flaxseed, set aside for 3-5 minutes
Mix up margarine, sugars
Stir in flaxseed mixture
add vanilla
Blend
Put in all of the dry ingredients. Add the oats and chips last

Roll into little balls, put on a baking sheet

Bake 8-12 minutes

Enjoy with a glass of soy milk

South of the Border

This is a quick and easy recipe to enjoy a South of the Border taste!

Ingredients:
-1 package soyrizo (I can only find this at Trader Joe's)
- 1 cup diced green, red, and yellow peppers (you can get them pre-diced in a bag, frozen, that is easiest)
- 1 pkg. corn tortillas (if you want to go gluten free)
- 1/2 cup diced onions (again, I suggest pre-diced and frozen!)

Saute onions & peppers. Add soyrizo. Cook for about 5 minutes.
WARM YOUR TORTILLAS FIRST IF YOU ARE DOING THEM IN THE OVEN!

To warm tortillas, stack them on top of each other, wrap in foil and heat in a preheated 350 degree oven for 10 to 15 minutes. You can also wrap tortillas loosely in waxed paper or a plastic bag and microwave on HIGH -- 15 seconds for two tortillas, 30 seconds for four tortillas and 1 minute for eight.

I sometimes add cheese, or spread this mixture over a bed of greens!
